LEFTOVER QUINOA SALAD


Sometimes you are forced to be creative. Like when you a hungry and there's nothing much in the fridge.

I recently came up with this salad: mixed greens (I used spinach and endive), cucumber, hummus and quinoa seasoned with turmeric and salt (I prefer Himalayan). All garnished with flat parsley, lemon and olive oil.
