MY NEW FAV EGGS

I can't cook. These days I make food quite often but it's all so simple that I wouldn't class it as real cooking. The biggest reason for not having learned how to cook more complex meals is that I actually like to eat simple food and so does the rest of my family. I also eat out so often that when I'm at home I want to keep my meals very light and clean.

Eggs is something I eat a lot. I try to include protein and greens in my breakfast and an omelette or scrambled eggs is a very easy and quick way to do that. This is my favourite scrambled eggs right now: two organic eggs, a juicy and ripe tomato chopped up, plenty of chopped up fresh spinach, a spoonful of goats cheese plus plenty of black pepper and Himalayan salt. Stir well and cook into a scramble or an omelette. The goats cheese gives it a great taste and a slightly creamier texture.

  1. I read somewhere that one should not add salt to uncooked eggs, as it makes them gray. I have religiously followed this advise :-)
I have an omelette once a week for dinner. I make mine similar to yours, but do not mix anything in the eggs, I prefer the tomatoes etc fresh.

    1. ha, so far none of my eggs have turned grey and i've cooked a fair few! i remember when i made my first ever omelette... we had just been taught at school how to make it but when they told us to put as many table spoons of water as there are eggs i remembered that i was supposed to do that with salt. an interesting flavour ;-)

  3. I'm not sure that you can't cook. This dish looks pretty good to me, and isn't it most important that you can prepare something that you'd enjoy. I would consider myself a decent cook, but I never make anything complicated. Just don't have the time, energy or interest. Nor do I really like to follow recipes, I'd rather improvise.. But I do love to eat :-) Simple food from good quality ingredients is usually the best. You can always eat something more complicated with mousses and reductions and what not at restaurants.
